Pengaruh Jenis Substrat Terhadap Pertumbuhan Rhizopus oligosporus DP02 Bali dalam Pembuatan Ragi Tempe

 This research aims to find out the effect of different types substrates on growth Balinese local isolate Rhizopus oligosporus DPO2 in making tempeh yeast and identify right type substrate for R. DP02 yeast. was an experimental that analyzed descriptively with as main factor consists 5 flours including: rice, tapioca, corn, wheat soybeans. Each treatment repeated 3 times resulting 15 units. The results showed produced tempe which has Bali dense very mycelium, dry weight mycelium 0.49 - 0.58 g, total mold 6.97 7.77 log CFU / g water content. 4.47 6.01%. Corn flour produces highest Bali, following characteristics: content 4.55%.
